Homemade Bak Kwa (BBQ Pork Jerky)

 
I have shelved the idea of making bak kwa (肉干) at home for the past 2 years. This year, as the kids are older and spending more time in school, I have time to try it out. 

The thought of being able to control the quality of ingredients (without preservatives and additives) that goes into the final product, makes the effort (not much effort though) all worth while. The bak kwa was sticky, sweet, salty and succulent when eaten right out of the oven.


The ones I made was on the thicker side. Note to self: need to improve on getting a thinner layer of meat on the baking tray in my next attempt (There will definitely be another attempt!).



Homemade Bak Kwa
Ingredients:
500g minced pork (五花肉 or pork minced that contain 30% fat) 
100g brown sugar 
1 Tbsp light soy sauce
1 Tbsp oyster sauce
1Tbsp dark soy sauce
1/2 Tbsp fish sauce
1/4 tsp five spices powder
1/2 tsp salt
1/4 tsp sesame oil
1 Tbsp Chinese rice wine (花彫酒), you can use alcohol like brandy, cognac or rose wine

Honey Glaze
1 Tbsp honey
1 tsp water

Directions:
  • In a mixing bowl, combine sugar, soy sauce, oyster sauce, dark soy, fish sauce, rice wine, salt and five spices powder.
  • In a bigger mixing bowl place the minced pork and add the sauce mixture to it. Mix until the sauce is incorporated into the meat.
  • Using a big spoon or a pair of chopsticks, stir the meat in one direction until the meat starts to feel sticky or form into a dough where most of the meat does not stick to the side of the bowl. 
  • Store the mixture overnight in the fridge.
  • Preheat oven to 130 degrees Celsius on fan mode. 
  • Spread the meat thinly on a baking pan (40cm x 40 cm), lined with baking paper and bake for 15 min.
  • Remove the baking tray and turn the oven temperature to grill function at 200 degrees Celsius,  
  • Using a knife or pizza cutter cut the meat into 16 equal pieces, flip them over and brush the top of each piece with the honey glaze and grill for 10 min.
  • After 10 min, flip the pieces over again and brush them with the honey glaze and grill for another 8 min or dark golden brown.
  • Let cool and enjoy!
