This coming weekend (Sunday, 9th August), Singapore will be celebrating our 50th year of Independence. A Golden Jubilee!
To join in the festivities, I decided to make some delectable, fun looking lolly cookies which looked like they are filled with confetti.
I used a basic cut out cookie dough and mixed in some hundreds and thousands to make them looked so colorful and fun. The cookie smells buttery, tasted not too sweet and have a tender mouth feel.
There are so much activities to join in during the 2 days that lead up to the celebrations. Have you planned yours?
Ingredients:
227g unsalted butter, room temperature
169g confectioners' sugar
1 egg
2 tsp vanilla extract
460g organic unbleached all purpose flour
2 tsp baking powder
1 tsp salt
50g hundreds and thousands
Steps to cookies:
- Preheat oven to 200 degrees Celsius.
- Sieve together flour, salt and baking powder, set aside.
- Cream butter and sugar until light and fluffy.
- Add egg and vanilla extract and mix until well combined.
- Add the flour mixture into the butter mixture until the dry ingredients are completely incorporated.
- Add sprinkles and mix until just combined.
- Divide the dough into two portion and work with one portion at a time.
- Roll one portion between baking paper to a thickness of 0.5mm thick and using a round cookie cutter cut our desired shapes.
- Place cut out cookies on paper lolly stickers or wooden skewers on baking sheets lined with baking paper and bake for 7 - 9 minutes.
- Let cookies cool on baking tray for 5 minutes before transferring them to a cooling rack.
From the pictures, you can see that I have used the same dough to cut out some alphabet cookies too.
